Effect of water activity on enterotoxin A production and growth of Staphylococcus aureus.

چکیده

Previous studies indicated that enterotoxin B production by staphylococci was strongly inhibited by slight reductions in water activity (a(w)) levels. Similar studies reported herein, employing an enterotoxin A-producing strain, indicated that this organism was capable of producing enterotoxin at a much lower a(w) level than that required for enterotoxin B production. Staphylococcal growth rates were slowed by decreased a(w) levels in all media tested; however, final cell counts did not drop below 10(8)/ml in the media with the lowest a(w) levels.

The inhibitory effects of Lactobacillus fermentum, Lactobacillus acidophilus and Lactobacillus paracasei isolated from yoghurt on the growth and enterotoxin A gene expression of S. aureus

BACKGROUND: Staphylococcal foodborne intoxication is the most common cause of foodborne illnesses by Staphylococcus aureus strains and most are caused by the enterotoxins of S. aureus. Staphylococcal enterotoxin A (SEA) is the most frequently responsible for staphylococcal food poisoning outbreaks. From a food safety and human health point of view, lactic acid bacteria (LAB) may provide a promi...

The antibacterial activity of the water extracts of three species of Salvia on Staphylococcus aureus, Escherichia coli and Pseudomonas aeruginosa

The aim of this study was to evaluate the antibacterial activity of the water extracts of three species of Salvia (S. perspolitana, S. palaestina, S. bracteata) on Staphylococcus aureus, Escherichia coli and Pseudomonas aeroginosa. The antibacterial activity of water extracts of the studied species on the bacterial strains was examined using well diffusion method and minimum inhibitory concentr...

The effect of undissociated lactic acid on Staphylococcus aureus growth and enterotoxin A production.

The potential of Staphylococcus aureus cheese isolates to grow and produce staphylococcal enterotoxin A under conditions typical for cheese making was investigated in three broth experiments. The effect of the concentration of undissociated lactic acid (HLac) in conjunction with specific pH values was studied by adjusting pH at a single concentration of lactic acid. First, the time-to-growth of...

Association between the enterotoxin production and presence of Coa, Nuc genes among Staphylococcus aureus isolated from various sources, in Shiraz

The present study was aimed to identify the frequency of coagulase (Coa) and thermonuclease (Nuc) genes and Staphylococcal enterotoxin A (Sea) production among Staphylococcus aureus isolated from various sources in Shiraz. Moreover, the correlation between the Sea gene and coagulase and thermonuclease enzymes is also considered. A total of 100 S. aureus were isolated from various sources includ...

Detection of Classic Enterotoxin Genes and Coagulase Gene Typing of Staphylococcus Aureus Isolated from Raw Cow Milk in Isfahan

Background and Aims: Staphylococcus aureus (S. aureus) is considered as one of the most dangerous pathogenic bacteria due to the production of extracellular toxins. The objective of this study was to determine the prevalence of S. aureus and to characterize the recovered strains for their enterotoxin-producing genes in raw cow milk. Materials and Methods: During 9 months duration of the s...
